Paleo, Gluten Free Zucchini Bread

Everyone loves bread, right? This recipe gives you a way to have your bread and eat it too!

Zucchini Bread


Olive oil or coconut oil for greasing pan
2 cups almond flour
1⁄2 tsp salt
1⁄2 tsp baking soda
1 tsp ground cinnamon
1⁄4 cup olive oil
1⁄4 cup whole-leaf stevia powder
2 eggs
1 cup zucchini, grated

Preheat oven to 350°F. Lightly grease loaf pan. Combine almond flour, salt, baking soda, and cinnamon. In a separate bowl, mix oil, stevia, and eggs. Combine wet and dry ingredients. Fold in zucchini, pecans, and currants. Scoop batter into pan and bake for 30 to 50 minutes or until a toothpick comes out clean.
